寿司 is sushi: vinegared rice with fish, vegetables or egg. The word comes from an old word for sour. The spelling 寿司 was chosen for its sound and for luck, since 寿 means long life. It is also written 鮨 or 鮓.

The Japanese word 寿司 meaning "Sushi" is composed of the kanji 寿 (read su) meaning "longevity; congratulations; one's natural life" and 司 (read shi) meaning "director; official; govt office".
